Our special New Year’s Eve Signature Menu is ideal for a night in celebrating.
It begins with bread and our Hafod Cheddar Custard, followed by Tommy’s signature dish as starter: Beetroot cooked in Beef Fat, with Smoked Cod’s Roe, Goat’s Curd and Seed Crackers.
For main, it’s our famous Salt-aged Beef Wellington, served with Pommes Anna, Braised Red Cabbage and a rich Red Wine Jus.
Pre-dessert is a tangy Lemon Posset using our garden-grown lemon verbena, then for dessert, Tommy’s special Chocolate Fondants with Brandy Cream. This is all served with a bottle of our Black Swan Limited Edition Charles Palmer English Sparkling Wine.
We’ve also thrown in some Black Swan Blend Coffee and Chocolate and Rye Cookies for a New Year’s Day pick-me-up!

This sparkling wine is a special edition made exclusively for The Black Swan. A blend of both Pinot Noir and Chardonnay grapes that has spent 3 years on the lees. Flavours of apple, with honeysuckle, mango, and vanilla.
