The Made in Oldstead Signature Box contains a five-course menu for two people with a bottle of matched wine.
The Signature Box begins with bread served with Hafod Cheddar custard.
The starter is a twist on Tommy’s famous dish, beetroot cooked in beef fat served with goat’s curd and seed crackers.
Then it’s onto our incredibly popular Beef Wellington that uses a beautiful piece of prime salt-aged beef and a mushroom duxelle, wrapped in buttery puff pastry. This is served with a delicious duck fat potato rosti, Chantenay carrots and Oldstead greens.
This is followed by a creamy pre-dessert made using Crown Prince squash from the farm at Oldstead served with ginger and rosemary crumble.
Finally, an indulgent melt-in-the-middle pudding made with chocolate and the decadent coffee-like flavours of chicory root. This is served with a pourable cream made from plum kernels and dehydrated sweet and sour cherries that we’ve rehydrated in port.

Peter Sisseck is famous for making Pingus, an iconic wine that many consider to be the greatest Spanish wine of all. Psi uses biodynamic bush-vine Tempranillo grapes from the hot, dry Ribera del Duero region. Fantastic, deep and intense with ripe, plum, spice flavours – perfect with Beef!

The Signature Box will be delivered to your home by courier on Friday 11th December along with instructions for reheating.
Food box orders may be packaged and sent in more than one delivery. Food box sales are final, non-transferable and non-refundable.
