Our Easter menu begins with a loaf of sourdough bread from Haxby Bakehouse, alongside a delicious cultured butter.
Next, a starter comprising of hot smoked salmon bound together with hollandaise and topped with a jelly made from vodka infused with nasturtium flowers from The Black Swan restaurant garden.
The main course is a roast saddle of Spring lamb, from our meat supplier R&J Yorkshire’s Finest Farmer’s & Butchers. This is a really prized part of meat, topped with a farce made from lamb mince and wrapped in caul fat, prepped and ready to roast at home. This is served with locally-sourced, Yorkshire asparagus from Spilman’s, along with Pommes-Anna style lamb fat roast potatoes, creamy, whipped goat’s curd and rich lamb jus.
For pre-dessert, a creamy milk pudding made using raw milk from local supplier Cow Corner and Yorkshire rhubarb compote, followed by a dessert comprising of a sweet-woodruff and honey-infused mousse with hazelnut crumble base.
To finish, a selection of wonderful British cheeses from The Courtyard Dairy washed down with a stunning bottle of Walker Bay Pinot Noir.

Newton Johnson are based in the breathtakingly beautiful Hemel-en-Aarde valley (Heaven and Earth) where cooling sea breezes allow the perfect climate for Pinot Noir grapes. Their wines surely rival Burgundy for quality, but have their own specific authenticity. We love to serve this Pinot with Lamb dishes in our restaurants and hope you enjoy it at home!
