Based on a traditional old ‘dales’ recipe from the North of England, this cheese made by Tom and Clare Noblet has fresh, lemony flavours with a sharp, fresh finish.
1 x Holbrook, Cumbria (60g)
Made in the Lake District, Nicola Robinson and Martin Gott purchased 180 milking goats from a fellow artisan cheese-maker who decided to retire from cheese-making. The goats are milked once a day, and their warm milk goes straight into the cheese vat to make cheese that very morning. Sharp, saline and herbaceous.
1 x Winslade, Hampshire (60g)
After working for a cheesemonger in Australia, Stacey Hedges decided to pursue her passion, creating a Camembert style cheese. Encircled in spruce, this cheese takes on a piney note – soft and gooey, with some floral notes, too.
