The Made in Oldstead Classic Weekend Box contains two different three-course meals with each meal serving two people. The order will be delivered to your home by courier on Friday 6th November along with instructions for reheating.
Menu B begins with a creamy cheese and onion soup with bacon lardons, served with a crispy crouton cooked in bacon fat and a drizzling of Oldstead chive oil.
For main, it’s our take on cottage pie; beef shin braised in beef stock, topped with a smoky butter mash, red cabbage cooked in a port and orange juice sauce, and carrots cooked in a chicken fat emulsion.
For dessert, an apple and blackberry crumble, topped with a Yorkshire Millers and rosemary topping, served with a rich duck egg custard.
Menu C starts with thinly sliced cured halibut, served with a fermented pepper mayonnaise, pickled fennel, rye croutons and a garnish of dill fronds.
For main it’s our take on a classic French bourguignon using venison and a variety of veggies from the farm, including mushrooms and carrots. This is served with a creamy polenta made using raw milk from our friends at Cow Corner, as well as Oldstead honey-glazed parsnips and carrots.
To finish, a delice dessert comprising of a rye cookie crumble base, an artichoke and chocolate mousse and a chocolate glaze on top. This is served with creme fraiche and a sesame tuile.
